Definition of ancillary substances proposed
The board unanimously supports a proposal to clearly define ancillary substances, which broadly speaking are substances necessary to keep alive microorganisms that are on the national list of approved non-organic materials. For example, the additional ingredients needed to “carry” or “feed” a dairy culture or wine yeast. The board also supports a proposed review procedure and compliance criteria to help with future evaluations. This hard-fought victory comes after several attempts by the board to pass separate ancillary substances proposals in recent years, all of which were tabled.
