Sodium & potassium lactate should be added as sanitizers
Another food safety tool the board agreed organic handlers should have at their disposal is use of sodium lactate and potassium lactate as sanitizers for use in processing. The board’s recommendation that NOP add it to the National List of allowed synthetics for use in organic products is limited, however, to their use as microbial agents or pH regulators and not as a preservative.
