A new buffalo mozzarella brand which is both organic and kosher has been launched by a company in the Italian province of Caserta.
Produced under the strict guidance of the Rome rabbi's office as well as the usual organic food production regulations, the cheese was the brainchild of journalist Enzo Palmesano and Professor Gerardo Bovenzi of the Ponte Reale cheese maker in Ciorlano.
Meanwhile, another Italian producer has created Eko, an organic beer which is 4.6% abv. Vito Tarricone produced the beer using equipment bought from the Moretti brewing group when it closed the local brewery in Baragiano.
After a lengthy period of researching and sourcing the right organic ingredients, Tarricone has begun producing the organic beer which he sells to local bars, pubs and retail outlets.
