Blend targets new foods with ancient grains

FutureCeuticals has debuted an ingredient derived from a blend of
grains it says delivers nutrition and mouthfeel benefits to most
food categories, especially beverages and baked goods.

AncienTrim is comprised of amaranth, barley, buckwheat, durum, millet, chia, quinoa and spelt and is being marketed at a host of food groups from pasta to smoothies to baked goods, by the Illinois-based supplier. No deals had yet been inked but the company was in negotiations with large and small North American bakeries and had alerted its international network of distributors and marketers to begin promoting the ingredient. AncienTrim is manufactured using FutureCeuticals' patented process it developed in conjunction with the United States Department of Agriculture (USDA) and which it employs on most its other offerings such as its oat-based Nutrim. AncienTrim sells at a slight price premium over Nutrim, FutureCeuticals technical sales representative, Tracy Sheehan,​ told NutraIngredients-USA.com. He said such grains tended to be limited to cereals and baked goods due to texture and dispersibility concerns. "We have been working with a lot of new grains like chia and qunioa in R&D which led to us experimenting with various combinations until we arrived at the AncienTrim formula,"​ Sheehan said. "We pulled a lot of grains out of the past and brought them out of the woodwork."​ Nutrim employs the Food and Drug Administration (FDA) beta-glucan cholesterol-reduction claim although AncienTrim does not because its formulation does not contain the requisite level of fiber. "But it does contain a high level of protein and this is what we are selling it on - this well-rounded ingredient that in some ways mimics the grain diet our ancestors used to consume many thousands of years ago,"​ Sheehan said. "In development, mouthfeel was also important to us and this blend offers excellent mouthfeel characteristics which is why we are confident it is going to be very popular with smoothie makers, meal replacement beverages." ​The neutral-flavored ingredient is available conventional, baking grade and organic formats.​ Nutrim can make claims such as:

  • Helps lower serum cholesterol and triglycerides

  • Helps promote maintenance of healthy blood sugar levels

  • Helps support healthy immune function

  • Helps promote digestive health

  • Helps promotes healthy body weight maintenance
